For the weight, probably a 40-65 HP towing tune. You won't see any EGT problems with an older truck and a 3" downpipe in the 60-80 HP range, but you're not going to want to tow with the additional power if you're worried about the transmission.
Stock parts can fail with stock power and adding additional power is always a gamble.
As far as raising line pressure, it's only really during shifts as "boosting" it more than 10 or so PSI at all times usually takes it's toll on seals.
