Is there a way to check the previous program without going thru the custom tune option ?
Are previous settings the last custom tune you wrote ?
How many times can I rewrite my custom tune ????

To see the settings you have in your previous "custom options" program, you will have to go into the Custom Options menu and "Load Previous Settings".

The "Previous Settings" file IS the last customized option tune you wrote. It is not "tune specific". It is simply the settings you had when you last used the Custom Options menu and allowed the PCM to be programmed.

You can revise the "Previous Settings" file indefinitely. Each change simply overwrites the corresponding setting in the previous file. There IS a limit on the number of times you can rewrite flash memory of course. But, unless you plan to rewrite the PCM (and your Gryphon) more than a few thousand times, I wouldn't lose sleep over it.
