As long as you "drive by the pyrometer", you can use the highest available power setting to get the job done. You definitely will feel a performance increase between each tow setting as well as a definite increase in the ability to accelerate your loads faster.
I will interject a bit of my own personal preference here though. I tow horses a lot. I usually use a stock-ish power setting only because horses move in the trailer and can lose their balance when starting off. I can say for absolute certainty that the on-off-on power characteristic of a manual transmission while having the ability to accelerate faster may not be a good thing. It's all in the way you drive though. But honestly, with horses, you're probably not going to use 80 HP worth of additional power just because of the scenario I just described.
